Food safety is a growing concern due to the increase in food-borne illnesses caused by food adulteration, excessive use of pesticides, use of chemical preservatives and artificial fruit ripening agents, microbial contaminations, and improper food handling. Chemical contaminants in food could be transferred from environmental or agrochemical sources, personal care products, and other by-products of water disinfects. In addition, microbial food safety can be threatened due to the presence of many pathogens, such as Salmonella, Escherichia coli, Clostridium botulinum, Staphylococcus aureus, and Listeria monocytogenes in foods. Globally, strict regulations are imposed to limit the potential contaminants in foods. Development of accurate, rapid, and inexpensive approaches to test food contamination and adulteration would be highly valued to ensure global food safety. There are existing processes to ensure safety of food products from chemical and microbial contaminants. Apart from the existing measurement technologies, varieties of new techniques are also being emerged and these could be potential to ensure food safety and quality. In addition to chemical and microbial properties, sensory properties such as texture, mouthfeel, flavor, and taste, are among the most important attributes of food products to ensure their acceptability by consumers. Two approaches are available to evaluate sensory properties of food products, namely subjective and objective analyses. The responses are perceived by all five senses: smell, taste, sight, touch, and hearing. The approach used in sensory evaluation varies depending on the types of foods and the ultimate goal of the testing. Sensory attributes are the most important quality parameters after ensuring the safety of foods.\u003c\/p\u003e","brand":"Gardners","offers":[{"title":"Default Title","offer_id":52911205679383,"sku":null,"price":24961.44,"currency_code":"INR","in_stock":true}],"thumbnail_url":"\/\/cdn.shopify.com\/s\/files\/1\/0679\/6918\/8119\/files\/9783030686369.jpg?v=1781263283"},{"product_id":"aromatic-thiols-and-their-derivatives-9783030696214","title":"Aromatic Thiols and Their Derivatives","description":"\u003cp\u003eThis book is devoted to the synthetic and physical chemistry of aromatic thiols and their closest derivatives, sulfides, sulfoxides, sulfones, including those substituted by various functional groups such as acyl and thioacyl, alkoxide, ester, hydroxyl and halogens. The totality of this work presents extensive possibilities for milk spectral measurements that can be carried out in dairy. Moving beyond the standard milk components such as fat, protein, or lactose, this book presents near-infrared spectroscopy as a method that can also be used in disease diagnostics. The measurements and experimental results presented here are all based on the utilization of usually neglected near-infrared regions-regions with strong absorbance of water. The author has found the water - light interaction discussed to be an immensely rich source of information, not only on milk composition but also on the physiological status of the animals involved. A special section of the book is dedicated to exploration of potential interfering factors that may influence the analysis and contribute to the robustness of the models. Prior to protective painting, a steel surface is usually grit blasted or sandblasted to remove scale and contaminants and to roughen the surface. This book emphasizes that such surface treatment causes EE, increasing the strength of paint adhesion. Introduced here are the experimental results of thermally assisted photoelectron emission (TAPE) and tribo-stimulated (rubbing) electron emission (TriboEE) from practical metals after different kinds of surface-treatment processes. A detailed description is given of how Arrhenius activation energies relating to electron transfer through the surface overlayer and also the energy levels of electrons trapped in the overlayer can be obtained, and how TAPE and TriboEE data can be influenced by the chemical properties of that overlayer. This book is composed of four parts: I. Surface treatment processes; II. The principle of EE analysis used for practical surfaces; III. Materials andmethods of EE and X-ray photoelectron spectroscopy (XPS); IV. EE and XPS characteristics of practical surfaces. It also provides guidance on the design and improvement of catalysts and ligands. The reactions investigated include: (i) a nitrile-containing template-assisted meta-selective C-H activation, (ii) Pd\/mono-N-protected amino acid (MPAA) catalyzed meta-selective C-H activation, (iii) Pd\/MPAA catalyzed asymmetric C-H activation reactions, and (iv) Cu-catalyzed sp3 C-H cross-dehydrogenative-coupling reaction.  The book reports on a novel dimeric Pd-M (M = Pd or Ag) model for reaction (i), which successfully explains the meta-selectivity observed experimentally. For reaction (ii), with a combined DFT\/MS method, the author successfully reveals the roles of MPAA ligands and a new C-H activation mechanism, which accounts for the improved reactivity and high meta-selectivity and opens new avenues for ligand design. She subsequently applies ion-mobility mass spectrometry to capture and separate the [Pd(MPAA)(substrate)] complex at different stages for the first time, providing support for the internal-base model for reaction (iii). Employing DFT studies, she then establishes a chirality relay model that can be widely applied to MPAA-assisted asymmetric C-H activation reactions. Lastly, for reaction (iv) the author conducts detailed computational studies on several plausible pathways for Cu\/O2 and Cu\/TBHP systems and finds a reliable method for calculating the single electron transfer (SET) process on the basis of benchmark studies.\u003c\/p\u003e","brand":"Gardners","offers":[{"title":"Default Title","offer_id":53644782764311,"sku":null,"price":11198.24,"currency_code":"INR","in_stock":true}],"thumbnail_url":"\/\/cdn.shopify.com\/s\/files\/1\/0679\/6918\/8119\/files\/9789811045219.jpg?v=1783501053"},{"product_id":"x-ray-absorption-spectroscopy-for-the-chemical-and-materials-sciences-9781118676189","title":"X-ray Absorption Spectroscopy for the Chemical and Materials Sciences","description":"\u003cp\u003eA clear-cut introduction to the technique and applications of x-ray absorption spectroscopy X-ray Absorption Spectroscopy is being applied to a widening set of disciplines.
